In contrast to the solid and flat blade design of the cook’s knife, Wüsthof’s new Classic Vegetable Knife is uniquely crafted with a row of precisely formed holes near the blade’s edge, and a distinctive ridge above it. This combined design of holes and a raised, narrow line works in tandem to significantly reduce friction and allow even the stickiest ingredients to easily slide off the blade.
The new Classic Vegetable Knife also features Wusthof’s exclusive Precision Edge Technology (PEtec) for increased sharpness straight out of the box, and enhanced edge retention.

Prior to Wüsthof’s development of its patent-pending Precision Edge Technology (PEtec), each Classic knife received a hand-finished edge, a process that could not entirely rule out the possibility of some variance in the angle of the blade on either side. Today’s Classic knives have razor-sharp blades with absolutely equal angles on both sides, in result of using guided, state-of-the-art lasers, an exclusive Wüsthof technology. Sharpness has increased by 20 percent, and Classic knives now maintain their edge twice as long.
Additionally, the new edge craftsmanship includes a “sharp and grind” technology designed to gradually lessen the amount of steel running down the spine of each knife, and from the spine to the knife’s cutting edge. This further refinement enhances the blade’s sharpness and edge retention.
